Today is Easter Sunday (Happy Easter Everyone!), so I have chosen the obvious route for today´s blog: eggs. There are so many wonderful egg creations out there and even the most basic such as scrambled or soft-boiled are among the greatest eats to be found anywhere.
Some people´s worst fear is dying penniless: the kids and grandkids have to pay for their own schooling and it´s all your fault. I don´t really understand this. There is always a convenience store to rob or an old lady´s oversized purse to grab. If you are creative, cash can always be found.
Since I’m only in Oklahoma for a small part of the year I’ve been forced to make good egg dishes at home, including this one: Juan Herrera’s Papas con Chorizo, a combination of eggs, homemade chorizo, onions, peppers, cheese and Fuego Fries (their wonderful seasoned ‘n fried potatoes). This amazing breakfast is served with warm, fresh corn tortillas and a salsa so good I have considered kidnapping Juan and (if I have to) pistol-whipping the recipe out of him.
