Flashback Friday: Missin´ Prince

It´s Flashback Friday, and this time around it´s a sadder Friday than we have seen in quite a while. Prince passed away yesterday, a totally unexpected event that has left a lot of us bummed out.

We still have to eat, and the only food that comes to mind is comfort food. I love this dish. It is a combination of newly-cooked pasta and marinated tomatoes. It´s about as simple as it goes to make, and with good tomatoes it´s a delicious dish you will find yourself coming back to when comfort food is again on the menu.

This weekend will be filled with the wonderful music Prince brought us, decade after decade. RIP Mr. Nelson.

Hot Spaghetti, Cold Tomatoes

3 lb. ripe tomatoes

3 Tbs red wine vinegar

3 Tbs extra virgin olivenolje

3 Tbs chopped fresh basil

2 Tbs minced garlic

sea salt og ground black pepper

revet Parmesan-ost

Pasta: tagliolini, spaghetti, vermicelli or linguine

Remove the seeds from the tomatoes, chop them and have them in a bowl (with all the juices). Add vinegar, oil and basil and stir together. Fry the garlic until soft in a pan with olive oil. Add the garlic to the tomato mixture. Season with salt and pepper and let stand in the fridge for 2 hours.

Cook the pasta in well-salted water, drain, and mix the hot pasta with the cold tomato mixture, Topp with Parmesan and more ground pepper.
